Kala jamoon ! Irresistably Good !!

I am eating only black until I make/taste something delectable than this !
         Kala jamoon , is the not so popular clan of the royale Gulab jamoon. Unlike Gulab jamoon this dessert has always been let down by many. The irony is , Kala jamoon tastes as delicious as Gulab jamoon does.
So its time to go Black !
The process is very similar to gulab jamoons except for, it has a green center and is fried for long. 
Kala jamoon is a no fuss , simple and easy to make ahead dessert that your entire family will enjoy!
Ingredients :  yield : 24 jamoons
 For the outer layer:
  • 1.5 cups : Full fat Milk powder ( i used Nido)
  • 3 tbsp : All purpose flour
  • A pinch : Baking soda
  • A pinch : Salt
  • 2 tsp : Melted butter / ghee
  • 2 tbsp : Yoghurt
  • Oil for deep frying
For the Green center
  • 3/4 cup : Full fat Milk powder ( i used Nido)
  • 1 tbsp : All purpose flour
  • 1 tsp : Melted butter / ghee
  • 1 tbsp : Yoghurt
  • Pinch or few drops : Green food color
  • 1 tbsp : Crushed pistachios
For sugar syrup
  • 1.5 cups : Sugar
  • 2 cups : Water
  • Few strands saffron
  • 1 tsp : Cardamom powder
Method :
  • In a bowl add in flour, milk powder, salt, baking soda, ghee and curd mentioned in the outer layer list.
  • knead them to a soft sticky dough. Adding more curd if required. Now cover and let the dough rest for 5 mins while you prep up with the green center.
  • In another bowl add in the ingredients mentioned in green center list and knead them to a soft dough . Keep this covered and let the dough rest for 5 mins.

  • After five minutes uncover the dough's (both white and green) and divide each dough into 24 portions. Roll them into smooth balls.

  • Green ones will be half the size of  white ones.
  • Meanwhile start off with the sugar syrup,Take sugar and water in a sauce pan, bring it to boil. Simmer it for 5 to 8 mins till it gets little sticky. No need of string consistency.
  • Now add in cardamom powder, saffron and mix well. 
  • Keep the syrup covered until required.
  • Start shaping the jamoon's now. Take a white dough ball and pat it into oval shape.Place a green dough oval log in the center of the white one and re shape it to a oval jamoon.
  • Repeat the process and shape every jamoon in the same manner.I made few rounds and a few oval shaped ones.
  • Once the oil is slightly hot add the jamoon's one by one and fry on low to medium heat until dark in color.
  • Fry the shaped jamoon's adding four to five of them at a time and do not over crowd.
  • Once they turn dark , drain and add them to the warm syrup.
  • Let the jamoon's soak for couple of hours in the syrup and later serve them warm/cold.
  • Yummy yummy Kala jamoon's are ready to hog on !!
  • Man! These look so gooooddd can't stop admiring ...Phew my effort paid off !

  • Firstly i would like to apologize as few pics are missing here.Was so involved in its making that i totally forgot to click. :p
  • Knead the dough slightly sticky, in the resting process the dough tends to absorb the moisture and turns out dry n crumbly giving us hard time to shape.
  • Do not worry that its sticky , once the dough rests it becomes pliable.
  • Do u want to make less/more quantity ? No problem just keep in mind the white dough has to be double to that of green dough that's it .
  • You can shape them either oval or rounds either ways tastes and looks equally scrumptious !
  • Fry the jamoon's on low to medium heat or else jamoon's will be under done in the center and they will not absorb the syrup which is a big No No !
  • No need of string consistency to the syrup.Once sugar is melted just simmer for few mins and that works best.
  • Make sure to drain the jamoon's well before adding to syrup.
  • The syrup has to be warm while adding the jamoon's.If the syrup is cool just heat it for few mins while adding.
  • Traditionally they are rolled in desiccated coconut just before serving. I did not do that but choice is up to you.
