Ridge gourd peel chutney !

We tend to forgo the vegetable peels most of the times neglecting their nutritional values which are at times higher than the actual vegetable ..
Ridge gourd is loaded with nutrients such as dietary fibre, vitamin C , Riboflavin, zinc, thiamin, iron and magnesium..so is its peel .
Comparitively its peel is richer in dietary fibre than the gourd.
Ridge gourd peel chutney is a spicy flavorful condiment for rice, idli,dosa etc and makes a delicious spread for the sandwiches .
  • 1 cup : Ridge gourd peel (wash and pat dry)
  • 1 tbsp : Chana dal
  • 1/2 tsp : Cumin seeds
  • 3 to 4 nos : Green chillies
  • Lime size : Tamarind (clean by removing seeds and fibre)
  • 4 to 6 Sprigs : Coriander leaves with stalks
  • 1/8 tsp : Turmeric
  • Salt to taste
  • Water for grinding
  • 1 tbsp +1 tsp : Oil
  • 1/4 tsp : Mustard seeds
  • 1/4 tsp : Cumin seeds
  • 1/2 tsp : Urad dal
  • 1 broken : Dry red chilli
  • In a small sauce pan add 1 tsp of oil ,Once hot add chana dal , cumin seeds and fry them until golden .
  • Later add the ridge peel , tamarind, green chillies and saute for couple of minutes ..
  • Turn off the heat and cool it down to room temperature.
  • In a small blender jar add the sauteed, along with turmeric , coriander and salt.
  • Grind this to a thick yet smooth paste adding water as required.
  • Make the tempering with rest of the ingredients i.e. cumin , mustard , urad and dry red chilli .
  • Add the tempering to the chutney and serve !
