Coconut poli !

Coconut poli or Kobbari polelu (in telugu) is a traditional sweet flat bread made during festivals using whole wheat flour and stuffed with coconut jaggery filling.
This is such a simple and easy to make ahead dessert without much of a fuss or preparation.
Coconut poli is in a way a healthy dessert as it is whole wheat based , uses very little fat unlike other desserts and a comforting dish for all the coconut lovers like me ! 
Ingredients :        yield : 12 nos
  • 1.5 cup : Whole wheat flour / Atta
  • Pinch of yellow food color ( optional )
  • 1/4 tsp : Salt
  • 1 tsp : Oil
  • Water as needed for dough making
  • 2 cup : Freshly grated coconut
  • 1.5 cup: Jaggery 
  • 1/4 cup : water
  • 2 tsp : Cardamom powder
  • Oil/ Ghee as needed for frying
  • In a deep mixing bowl add the flour , food color,salt and mix well.Now adding water as required knead this into a soft dough and smear oil all over the dough and set aside covered with a damp cloth for half hour.

  • While the dough resting start off with the filling .
  • In a pan / Kadai add the jaggery along with 1/4 cup of water and heat until the jaggery melts.
  • Now pass the jaggery syrup through a sieve to remove impurities if any.
  • Pour this back to the same pan and bring this to a gentle boil .
  • Next add the grated coconut and cook this on medium heat until all the moisture evaporates and becomes thick.

  • Once it starts to thicken add the cardomom powder , stir well and turn off the heat.
  • Now cool this mixture to room temperature.
  • Uncover the dough and knead it for a minute. Later divide the dough into 12 equal portions.
  • Now roll each dough ball into thick circles and place a spoonful of filling in the centre , seal this by bringing the edges together and press them to lock in the goodness.

  • Dusting with dry flour roll this gently into a roti using rolling pin or by patting with your fingers .
  • Now fry this on a tawa on low to medium heat until golden spots appear on both the sides by drizzling with oil / ghee.

  • Repeat the process of filling , sealing and cooking until all are done .
  • Cool them to room temperature and store in an airtight container .
  • Irresistably good Coconut poli's are ready to cherish ...

Notes :
  • You can use half of wheat flour and half of All purpose flour for extra soft poli's.
  • One can always substitute fresh coconut with dry coconut but the desicated one will not work for this as the natural oils / fat is removed in it it doesn't taste that good.
  • Food color may be avoided or can be substituted with turmeric.
  • Brown sugar can be replaced with jaggery.
  • Fry on low to medium heat .When cooked over high heat the jaggery starts to melt and tends to stick to the tawa.
  • Stays good at room temperature in an air tight container for about a week and more depending on the weather conditions.
