Veggie Gold Coins !!

Veggie gold coins are shallow fried fritters made using bread discs as their base and the mixed veggies as its top.. Its crispy exteriors with flavor loaded interiors are to crave for!! This is a perfect accompaniment for tea/coffee and best snack for the rainy evenings !!
Ingredients :  serves : 5 
  • 10 slices : Bread
  • 3 large Potatoes , boiled , peeled and mashed
  • 1 medium : Carrot , peeled , finely chopped and boiled
  • 10 nos : Green beans , finely chopped and boiled
  • 1/4 cup : Fresh / frozen peas crushed
  • 4 nos : Green chillies minced
  • Few sprigs : Coriander chopped
  • 1 tsp : Chaat masala
  • 1/2 tsp : Oregano
  • Salt to taste
  • 2 tbsp : Corn flour
  • 3 tbsp : All purpose flour / Maida
  • 2 tbsp : Sesame seeds
  • Oil for shallow frying
  • For brushing : 1 tbsp : Maida mixed with 1/4 cup water
Method
  • Before heading into the cooking process ...remove the edges of the bread slices and cut them into circular discs using a cookie cutter/any round mould..
  • Now in a mixing bowl add the mashed potatoes , chopped carrot , beans , peas , coriander , minced green chillies , salt , chaat masala , oregano , maida and corn starch ...
  • Without adding any water knead this into a dough with the moisture of the veggies...
  • Now add a spoonful or two of the mixture on each bread disc and press firmly sealing the sides of the disc.
  • Brush their tops i.e the potato mixture with maida water and sprinkle few sesame seeds over it. Now press it slightly so that the seeds stick to the potato mixture..
  • Next prepare a pan with oil for shallow frying..once the oil is hot add the discs with potato and sesame seeds side first ...,once it turns slightly golden flip over and fry on the other side too...
  • Later remove and drain them on a paper towel ..
  • Veggie gold coins are ready to hogg on !! Serve them hot with ketchup or chilli sauce of your choice..


  • Notes : Do not over boil the vegetables ..because the more water they absorb the difficult it gets to knead .. 
  • Instead of flours you can add egg for binding too.. 
  • You can always deep fry them but i prefer shallow frying.. 
  • Stale bread works great for this recipe as it tends to absorb less oil when compared to fresh ...
