Ooresina Kooralu - Pickled Veggies !!

Ooresina kooralu means Pickled veggies , which is a popular side in Most parts of India, served with Akki roti/ Sarvapindi, roti, poori and tastes the best with Curd rice(My favorite too ) ... Crunchy vegetables like Carrot, Raw Mango, Tindora, green chillies, radish, Garlic etc are pickled in Mustard, fenugreek, cumin powders along with citrusy lemon juice.
This is an authentic make that i grew up relishing all my childhood which was prepared by my granny and then by my mom during every summer ...without it, the summers were incomplete !!


Ingredients
  • 4 cups : Thinly sliced Vegetables 
  • 12 nos : slit Green chillies
  • 8 nos : Garlic cloves sliced
  • 4 tbsp : Mustard seeds 
  • 1 tbsp : Fenugreek seeds
  • 1 tbsp : Cumin seeds
  • 1 tsp : Turmeric
  • 1/2 cup : Lemon / Lime juice
  • Salt to taste
  • 2 tbsp : Ground nut oil
  • 3/4 cup : Oil
Method
  • Thinly slice or julliene the vegetables like Carrots, beans, Radish Tindora, Raw mango etc.
  • Spread them on a muslin cloth and dry them in sun for half a day until they are dry to touch.
  • Dry roast the mustard seeds for couple of minutes until they start to pop and grind into powder once cooled to room temperature.
  • Dry roast the fenugreek and cumin seeds until aromatic and grind into powder once cooled to room temperature.
  • In a deep mixing bowl add the mustard seeds powder, fenugreek cumin powder, Salt, Turmeric and give it a stir.
  • Next add vegetables and mix until the veggies are coated with the masala powders.
  • Now add the oil and lemon juice mix well and set aside covered for curing.
  • This might takes 3 to 4 days depending on the weather but, do not forget to stir them every day.
  • After which you will observe the veggies tend to soften a bit and oil/liquid starts to float on top ...this indicates that the pickle is ready ...
  • Give this a good stir and scoop into sterilised container and store at room temperature ...stays best for upto a month and more depending on weather conditions...
  • Serve this with roti / poori / curd rice !!
