Paneer Tikka Masala !!

Paneer tikka masala is an Indian dish made using marinated paneer that is grilled and cooked in a spicy gravy ... It is a vegetarian alternative to chicken tikka masala that is mainly made using of paneer...
The yoghurt spice marinate and grilled veggie paneer mix takes this dish to yet another level than the regular paneer gravies..The grilling adds that rustic burnt flavor that is so unique n authentic ...


Ingredients
For Tikka :
  • 200 gms : Paneer cubed
  • 1/2 cup : Onion cubed
  • 1/2 cup : Bell peppers cubed
  • 2 tbsp : Roasted gram flour
  • 1/4 cup : Yoghurt
  • Salt to taste
  • 1/2 tsp : Chat masala
  • 1 tsp : Lemon juice
  • 1 tsp : Garam masala
  • 1 tsp : chopped ginger
  • 1 tsp : chopped garlic
  • 1 tsp : cumin powder
  • 2 tsp : Red chilli powder
  • 1/2 tsp : white pepper powder
  • 4 tbsp : Oil
For the Gravy : 
  • 3 tbsp : Oil
  • 2 nos : Cardamom 
  • 2 nos : cloves
  • 1/2 tsp : Ginger garlic paste
  • 3 large : Tomatoes ( boil,  peel the skin and make puree)
  • 2 large : Onions sliced ( caramalised n ground into paste )
  • Few sprigs Cilantro/ Coriander chopped
  • 1 tsp : Coriander powder
  • 1 tsp : Red chilli powder
  • 3 tbsp : Milk 
  • Water as needed
  • Salt to taste
  • 1/4 tsp : Sugar
Method
  • In a bowl add the roasted gram flour and dry spices mentioned in the tikka recipe ..now add enough yoghurt n make this into a thick paste ...later heat the oil to smoky point and add this to the yoghurt paste ...
  • Now add the paneer , pepper and onion cubes to this marinate mixture n coat them well with the same ..gently with your hands..

  • Now refrigerate this coated veggie paneer mix for atleast an hour for marination...
  • Later heat a skillet/ pan with a couple of spoons of oil n fry the marinated until golden..
  • Once fried take them onto a plate and set aside until use..
  • Now heat a pan , add the oil...once hot add the cardamom n cloves..next stir in the caramalised onion paste n saute until oil oozes out ...
  • Later stir in the ginger garlic paste and pureed tomatoes...saute this on low heat until oil oozes ...add in the dry spices and salt n mix well...
  • Next add the fried paneer n veggies...n give it a gentle stir ..
  • Cover and cook for couple of mins...
  • Add the milk , water , sugar , leftover marinate if any n stir well ...now simmer this for 5 mins...
  • Once cooked n slightly thick sprinkle with coriander leaves n stir well ...
  • Now cover this n cook for couple more mins..
  • Later turn off the heat n serve hot with Roti/Naan / Kulcha/ Rice of u r preference..
Tastes perfectly delicious and so authentic ...though it is made in a jiffy without any fuss..
