Eggless Potato Garlic Chilli Bombs !!

Potato garlic chilli bombs are flavor packed with a twist of mashed potato ..that not only enhances the taste but texture too !! These tiny rolls does'nt need much of kneading unlike the other bread rolls so an easy option for amateur bakers !! These serve as a perfect tea time munch or as a side to u r hot soups ...
Ingredients : For the bread rolls
  • 2.5 cups : Bread flour
  • 1/2 cup : Boiled, peeled and mashed Potato
  • 1.5 tsp : Instant yeast
  • 3/4 cup : warm water 
  • 1/2 cup : warm milk
  • 1 tsp : Salt 
  • 1 tbsp : Butter, softened at room temperature
  • 2 tbsp : sugar
  • 2 tbsp : Milk for brushing the rolls
For the filling
  • 3 tbsp : unsalted butter , Softened at room temperature
  • 2 tsp : Red chilli flakes
  • 1 tsp : Mixed italian herbs/ Italian seasoning
  • 1/8 tsp : salt ( avoid if using salted butter)
Prep work : 
Mix all the ingredients mentioned in filling section in a small bowl n set aside until use .

Proof the yeast :  
In a bowl add the warm water , warm milk , sugar and mix in the yeast n keep it covered for proofing for 10 mins until frothy n foamy..
Use warm water n milk as hot liquids kill the yeast ..the liquids have to be just above the body temperature ...

  • In a deep mixing bowl add the flour, mashed potato , salt and proofed yeast mixture and knead into a soft dough ..The dough will be slightly sticky ..
  • If u r dough is not sticky as shown then use another tbsp or two of warm water...
  • Now dust the counter top or any flat surface with a tbsp of flour and invert the dough on to it ..and continue kneading until the dough is non sticky and smooth say for about 5 to 8 mins..
  • Place this dough in a greased bowl and keep in a warm place covered for an hour or until well risen and doubled..

  • Once it doubles in size knock out the air by punching and take it onto a floured surface and knead for a min..
  • Next weigh the dough and divide into 18 equal portions or just eye ball n divide..
  • (My dough weighed 593 gms so i divided into 18 dough balls weighing 32 gms each ) 
  • (18 dough balls fit perfectly into a 12" round tin ..u can increase or decrease the number according to the size of u r pan )
  • Now roll each dough ball into small thick discs and place little bit of butter n herb mix..
  • Now seal the edges by pinching them together as we do for the paratha's..
  • Next roll them into perfect round balls ..
  • Repeat the same with all the dough balls and place them in a  ( butter ) greased baking pan ..
  • Now place this in a warm spot covered for an hour or until risen n doubled..

  • Brush their tops with milk and bake them in an preheated oven @ 180°c / 350°f  for 20 to 22 mins or until golden..
  • Once they are baked to perfection , brush them with a tsp of butter .. 
  • Now these Potato garlic chilli flavorful bombs are ready to burst in u r mouth ..
These are so soft , fluffy n flavor loaded..gosh i love them..
We thoroughly enjoyed them with a piping hot bowl full of Hot n Sour soup...a perfect weekend meal!!
