Cinnamon Raisin Rolls !! Eggless !!

Cinnamon rolls with a burst of cinnamon and sweetness from raisins & mix of sugars are perfect for breakfast / brunch / as a snack on the go !! These are so addictive n finger licking good !!
     Cinnamon roll also known as Cinnamon bun/swirl/danish/snail is a sweet roll served commonly in Northern Europe and North America ..This roll is commonly used as a breakfast or dessert with flour, cinnamon, sugar and butter as main ingredients which provide a robust and sweet flavor.Cinnamon roll is often served with cream cheese topping or sugar icing ..
For the dough :
  • 3 1/2 cups : All purpose flour / Maida
  • 1/2 cup : Sugar
  • 1 tsp : Salt
  • 1/3 cup : unsalted butter softened at room temperature
  • 1/4 cup : yoghurt
  • 2 tsp : Instant yeast
  • 1 1/4 cup : Milk
  • Additional 2 tbsp : Milk for brushing the rolls
For the filling :
  • 1/4 cup : Granulated white sugar
  • 1/4 cup : Soft brown sugar/ Demarara sugar
  • 2 tbsp : Cinnamon powder
  • 3 tbsp : Golden Raisins roughly chopped 
For the glaze : 
  • 1 cup : Icing sugar
  • 1 tsp : Vanilla essence
  • 3 to 4 tbsp : Milk

  • In a bowl add all the ingredients except the 2tbsp of milk and mix until well combined with a wooden spoon ..
  • Invert this dough on a dusted counter top or any flat surface and knead for 10 to 12 mins until soft , elastic n shimmery ..

  • Place this dough in an oiled/ greased bowl n keep it in a warm spot covered for an hour or until doubled..
  • Punch out the dough to release the air and invert on to a flour dusted counter top ..Roll n shape this into rectangular sheet measuring 12"× 14" approximately..
  • In a small bowl add the sugars and cinnamon n give it a good stir ..
  • Now sprinkle the sugar mix and chopped raisins over the rolled dough sheet evenly leaving a little room at the corners ..
  • Later shape the sheet into a log rolling as tightly as possible and trim off the edges..
  • Prepare a 9"×13" pan by greasing with butter n dusting with flour ..
  • Now slice the log into 12 equal portions and place each roll leaving an inch gap in between them..
  • Cover the pan with a cling film or lint free cloth and place in a warm spot for second rise until doubled in size or for an hour..
  • Once doubled unwrap the pan and brush the tops of the rolls gently with 2tbsp of milk as mentioned..
  • Bake this in a preheated oven @180°c / 354°f for 20 to 25 mins until golden ...
  • Once baked cool the rolls in the pan itself..and prepare the glaze by mixing the powdered sugar, vanilla essence and milk ..Make sure there are no lumps and its silky smooth ...
  • Now drizzle the baked cinnamon rolls with sugar glaze n allow it to dry n set ..
  • Flavor bursting sweet Cinnamon raisin rolls are ready to hogg with a cup of hot beverage..
