Navratan Korma !! Mughlai Delicacy !!

Navratan korma is a Mughlai cuisine delicacy . Navratan literally meaning "Nine jewels" that refers to the number of veggies and nuts used in this dish ..Korma also spelled as Kormaa, qorma, kurma is a dish that originated in South Asia consisting of meat or vegetables and nuts braised in a spiced sauce made with yoghurt ,cream and nut paste ...The awesome combination of these both is a "Match made in heaven " !!!
This is a mild creamy gravy that goes well with any type of rice / roti ...The creamy sauce attracts the palette of one n all ...

Ingredients :

  • 2 cups : Mixed vegetables like diced Carrots, potatoes,cauliflower florets,chopped beans etc..
  • 1/4 cup : Frozen/ fresh peas
  • 10 to 12 cubes : Paneer (soak in water until use)
  • 1 medium : Tomated diced
  • 3 tbsp : Broken cashew pieces 
  • An inch piece : cinnamon
  • 3 nos: cardamom pods
  • 4 nos: cloves
  • 1/2 tsp : Shahi jeera
  • 1 nos :  bay leaf
  • 6 to 8 : Black peppercorns
  • 1 tbsp : roasted cashew pieces
  • 1 tbsp : fried Raisins
  • 1 large : onion finely chopped
  • 2 cloves: Garlic
  • An inch piece : Ginger
  • 2 nos : Green chillies finely chopped
  • 1/8 tsp : Turmeric 
  • 1 tbsp : Coriander powder
  • 1 tsp : Cumin powder
  • 1/2 tsp : red chilli powder 
  • Salt to taste
  • 1/2 tsp : Sugar
  • 2 tbsp : Low fat yoghurt well beaten
  • 1/3 cup : Evaporated milk / full fat milk / 2 tbsp cream
  • Few sprigs : cilantro chopped
  • 1 and 1/4 cups : water
Method :
  • Boil / steam the veggies including peas until 90% done..
  • **If using fresh cashews ..add a tsp of oil and fry the 1 tbsp cashew pieces and raisins until golden n set aside until use..
  • In a non stick pan ( preferrably ) add the oil once hot add the whole garam masala along with peppercorns and saute for a min or two..
  • Now add in the 3 tbsp of cashew pieces and fry them until golden..
                     
  • Next add in the chopped onions along with a quarter tsp of salt, turmeric n cook until onion caramalise a bit ..
  • Later add in the chopped garlic ,ginger,  green chillies n saute for couple of mins ..turn off the heat and allow them to cool at room temperature..

    • Once cooled add this to a blender jar and grind into fine paste adding 1/4 cup water if required..
    • Heat the same pan without adding any oil ...& add this ground paste . Fry stirring in intervals until oil starts oozing out...
    • Next add in the masala powders i.e..Coriander, cumin , red chilli , salt n mix well...
    • Now add in the boiled veggies, paneer and tomato dices...give it a good mix and add the evaporated milk , yoghurt ,sugar and remaining 1 cup of water ...stir well..
    •  Cook this covered stirring in intervals for 6 to 8 mins or until it attains required consistency...
    •                  
    • Lastly add the chopped cilantro , fried cashews and raisins ...stir n cook for another couple of mins..
    • Check and adjust the seasoning..
    • Stir n serve hot Navratan korma with roti's / naan/ kulcha/Phulkas/ rice etc..
    • Tastes great with any ...so flavorful, creamy n most important mild n veggie loaded ..All in All a awesome combo !!
