Rasgulla !! Rosogolla !! Spongy n light !!


Rasgulla is a syrupy dessert and popular Bengali dish..It is made of ball shaped dumplings of Chhena , cooked in light syrup made of sugar..This dessert sounds so simple to make but involves certain key points to follow inorder to yield perfect , spongy n light Rasgulla's !! After a number of failures finally i feel my Mission Rasgulla is accomplished !!...so sharing my happiness with all of you here ...

Ingredients : yield : 16 large rasgulla's ...
  • 2 litres : whole milk 
  • 4 to 5 tbsp : Vinegar
  • 1 cup : Granulated sugar
  • 3 cups : water
  • Nuts and pinch of saffron for garnish( optional )
  • 1 tsp : Rose water
Method
  • In a deep pan add the milk n bring this to a boil..
  • Once it boils turn off the heat and add vinegar tbsp after tbsp while stirring continuosly..
  • Continue this until  green whey seperates...
  • I added about 4 tbsp of vinegar...but this depends totally on the type of milk u r using so it might take more or else...
  • Once whey seperates ...pour it into a colander lined with muslin cloth ...
  • Now wash the chhena under running water until water runs clear and vinegar is washed out...
  • Now tie the edges of the muslin cloth n squeeze out water very gently u don't want the chhena to dry out completely...
  • Next tie this to the sink tap or somewhere at a height so that water drips out further..
  • Leave this for 10 mins..
  • Later untie the cloth and take the chhena on to plate or a smooth clean surface...
  • Now knead the chhena with your palm gently for 10 mins ...
  • Now divide this into small portions n shape them into golf sized balls...
  • Simultaneously bring sugar n water to a vigorous boil....and add the rose water to it..
  • Next add the chhena balls to the  boiling sugar water ...cover n cook for 10 to 12 mins...do not open the lid until then...
  • Later turn off the heat n transfer them to a bowl ...allow them to sit n soak the sugar syrup atleast for 2 hrs..
  • Garnish with chopped nuts and saffron n  serve them chilled...
Perfect , spongy , light n mildly sweet Bengali Rasgulla's are ready to dig in !!
