Kadai Mushroom !!


Kadai Mushroom is a  mild n flavorful dish that goes well with roti/rice ...sauteed onions and peppers cooked in a tomato based mild gravy with the added goodness of mushrooms n evaporated milk makes it unique and stand out when compared to other Kadai recipes...It is so simple n easy to make yet turns out delish !! 
Cooking yummies has become way to easy !!

Ingredients
  • 1 medium : onion chopped
  • 2 medium : tomatoes chopped
  • 3 : garlic cloves chopped
  • An inch piece : ginger chopped
  • 4 : cloves
  • 2 : cardamom pods
  • An inch : cinnamon stick
  • 1/2 tsp : Shahi jeera
  • 3 tbsp : oil (2+1 divided)
  • 1 medium : onion cubed n seperated
  • 1 medium : Capsicum / pepper cubed
  • 250 gm : Mushrooms thickly sliced
  • 1 tsp : red chilli powder
  • Salt to taste
  • 1/2 tsp : sugar
  • 1 tbsp : Coriander powder
  • 1/2 tsp : Garam masala
  • 1 tbsp : kasoori methi
  • 3 tbsp : evaporated milk / full fat milk
  • Few sprigs : coriander/ cilantro chopped
Method
  • In a pan add 2tbsp of oil..once hot add the cubed onions n capsicum n saute for couple of mins ...
  • Do not over cook as we need them crunchy..
  • Drain the oil n remove them on to a plate...in the same pan add the whole garam masala, chopped onions, ginger n garlic pieces..saute until onions caramalise a bit ..
    next add in the chopped tomatoes...n cook until tomatoes turn soft..
  • Now turn off the heat n cool them a bit..
  • Later add this to a blender and grind into a smooth paste add little water while grinding if required but do not add more...
  • Heat the same pan with remaining oil..once hot add the shahi jeera ..allow it to splutter ..
  • Now add the ground puree n cook on medium heat until oil starts to ooze out, stirring in intervals ..
  • Next add quarter cup of water n bring it to a gentle boil..
  • Now add the dry masala powders along with salt n sugar..
  • Stir n cook this for 4 to 5 mins ..
  • Next add in the mushrooms n continue cooking with the lid on ..for couple more mins until mushrooms are cooked well n turn soft...
  • Later add the evaporated milk along with sauteed capsicum n onion cubes..Stir n cook this for couple of mins..
  • Sprinkle the crushed kasoori methi n chopped coriander ..stir n serve..
Creamy n lucious Kadai mushroom is ready to serve along with some hot hot roti/ rice !!
