Cold Weather ??? Batter fermentation made easier !!


Fermenting the dosa / idli batter has always been a task since the day we moved here as the weather is cold year long ...
But we as south indians prefer dosa/idli for weekend breakfast ..so fermentation has become a dream come true..
Tried various methods over the years but was not completely satisfied as my batter used to ferment but never used to increase by volume  n turn bit frothy as it used to be in India..
But following these simple steps gave me perfect results...




Method
  • Wash n soak the dosa or idli ingredients thoroughly for two to three times until water runs clear ...
  • Then soak them in enough water for 8 to 10 hrs ...
  • Next morning grind the soaked into fine paste using the water that we soaked the dals / rice in...use as little water as possible ..
  • When u add more water fermentation takes really long ...
  • Once ground ...add the batter to a stainless steel container with a tight lid preferrably..
  • Now preheat the oven at the least temperature in your oven ..preheating takes 10 to 15 mins ...In my oven the least temp is 100°c..
  • Now place the container in the oven at the bottom rack ...
  • Turn off the oven and allow this to ferment for 10 to 12 hrs..or overnight...i prefer overnight...
  • Next morning u will wake up to perfectly fermented batter...
