Veggiestrone Soup !! Healthy and Perfect meal by itself !!


Veggiestrone is a perfect meal/ brunch dish for anytime of the day..Loaded with veggies and beans makes it unique, tasty and standout, than any other soup...
A clever way to feed your kids who are fussy to eat veggies n beans...Tastes so tasty n appetizing ..I usually never like soups that much but to my wonder I started with one and ended up having three bowls of it...Lol!!
Without any added sauces n flavors , this turns out to be a tasty treat to the palette n eyes as well , with the lovely colors of veggies n beans...
Perfect guilt free meal to kick start your day..so without any further delay lets head to its procedure...


Ingredients : 
  • 1/4 cup : onions chopped
  • 1/3 cup : Carrots peeled n chopped
  • 1/4 cup : Zucchini chopped
  • 1/4 cup : Bell peppers chopped
  • 1 large : Tomato chopped
  • 5 to 6 large  : Mushrooms chopped
  • 1/2 cup : thinly shredded cabbage
  • 4 nos : Garlic cloves crushed
  • 3 tbsp : Thick Tomato paste
  • 1 can / 1 Cup : Red kidney beans ( if using dried ..soak them overnight in water n cook them until soft but not mushy )
  • 1 tbsp : Olive oil
  • 1 tsp : Pepper powder
  • 1 tsp : salt 
  • 1 tbsp : Red chilli flakes 
  • 1 tsp : Mixed Italian herbs
  • Few fresh Basil leaves chopped
  • 800 ml : Vegetable / Chicken stock ( Or 1 stock cube diluted according to package instructions ..I used Maggi stock cube )
  • 1 tbsp : Corn starch mixed without lumps in 1/4 cup of water...
Method
  • In a deep pan add olive oil..once hot add the crushed garlic n saute for a min or two until golden n fragnant..
  • Later add the chopped onions ..n cook until soft ...
  • Next add the chopped veggies i.e..Tomato , peppers, zucchini, mushrooms, carrots ...
  • Stir n add in the salt..mix well again n cook until veggies turn soft yet slightly with a crunch..
  • Later add the tomato puree and cook for couple of mins...
  • Now add the chilli flakes , italian herbs n stir well...
  • Saute for a min or so...later add the vegetable / chicken stock ...
  • Now bring this to a vigourous boil covering with a lid...
  • Next add the cooked kidney beans and shredded cabbage...
  • Bring this boil once again n keep cooking until cabbage turns soft n raw smell is gone...
  • Now stir in the corn starch water , Pepper powder and chopped basil leaves...check and adjust seasoning..
  • Stir well and bring this to a boil...
  • Now the Veggie loaded soup is ready to serve hot ....

Tastes and smells heavenly ... we had it for our breakfast today along with some toasted garlic baguette...Yumm Yumm...we loved it to the core...
