Vegetable Hakka Noodles !!

Hakka noodles is a popular indo chinese style Noodles that is vastly sold at restaurants and fast food centres ..
This is favorite dish of many and enjoyed by one and all...
Hakka cuisine or Kuhchia cuisine , is the cooking style of the Hakka people, who are found in parts of Taiwan and in countries with Taiwanese communties ...
The raw materials used for Hakka food are no different from that of any other type of chinese cuisine..what you cook depends on what is available in the market ..
So there is no fixed req list for any dish..
Hakka  cuisine may be described as outwardly  simple yet tasty...

Ingredients :
  • 250 gms Egg noodles / Noodles
  • 1/2 cup Mixed peppers cut length wise 
  • 1 carrot peeled n cut length wise approx 2 inch size
  • 7 to 8 Mushrooms sliced
  • 1 onion sliced
  • 3 to 4 Garlic cloves finely chopped
  • 2 green chillies slit
  • Salt to taste
  • 1/2 tsp pepper powder
  • 1 tsp soya sauce
  • 1tbsp tomato ketchup
  • 1/2 tsp vinegar
  • A pinch ajinomoto
  • 1 tbsp chilli sauce
  • 2 tbsp olive oil
  • Couple of spring onion / scallion stalks chopped..
Method :
  • Cook the noodles adding little salt n oil according to package instructions or until 90% done...
  • Next drain noodles using a colander n set aside ..
  • In a deep pan add the olive oil ...once hot add the chopped garlic and slit green chillies..

  • Fry until garlic turns slightly golden...
  • Next stir in the onion , peppers and carrots..
  • Fry for a min until onions turn slightly soft..
  • Later stir in the mushrooms..
  • Cook this until mushrooms turn soft..
  • Later add the sauces, vinegar, salt,pepper powder and ajinomoto..
  • Cook this for couple of mins..
  • Next add the cooked noodles...
  • Stir this well with the veggies n sauces..
  • Once well incorporated ..cover n cook for couple of mins..
  • Check for the seasoning n adjust...
  • Lastly garnish with chopped spring onion...
***As the sauces contain salt so be easy on salt do not add all at once ..keep adding checking until right..
***carrots n peppers should have their crunch so do not over cook...
***cook the noodles until 90% done they get cooked with the sauces..if they compketely cooked in water they tend stick to each other while in sauces...

Hot n flavorful veggie Hakka noodles are ready to slurrppp...!!!
