Love Bites !!! Eggless Shortbread cookies !!!


Utterly Butterly Delicious cookies with sugar sprinkles worked in makes a perfect gift for your loved ones or as a treat for u r Valentine n apt for Birthday Parties as well  !!!
 The crisp n light texture of these cookies makes them perfect accompainment for tea time as well...
  Liked by one and all right from kids to aged..the pink n white heart sugar sprinkles excite my daughter to crave for more n more... : )  :)

Ingredients : yield :18 to 20 cookies
  • 123 gms unsalted butter ( at room temperature )
  • 55 gms castor sugar
  • 123 gms All purpose flour / Maida
  • 55 gms corn starch
  • Pinch of salt 
  • 1/2 tsp vanilla extract
  • 2 to 4 tbsp sprinkles ( choose according to u r taste ..i chose pink n white heart shaped ..apt for valentine theme  )
Method :


  • Sift the all purpose flour n corn starch together n set aside..
  • In a seperate bowl take butter , sugar and vanilla ...& whisk them until light n fluffy..
  • I used a stand mixer with paddle attachment...
  • Scrape the sides and add salt n sifted flour ...
  • Mix everything together either by whisking or by continuing in stand mixer on low or just with a wooden spoon..
  • Once everything comes together like a ball ..stir in the sprinkles n work them into the dough until well distributed...
  • Now line the baking tray or counter top with cling film..n take the dough ball onto it...
  • Spread another cling film over it...now u will end up with dough ball in the middle and cling film over top n bottom..
  • Now start rolling with a rolling pin n spread into a thick sheet ....
  • Now place this in the refrigerator for 30 mins ...to chill the dough...
  • Becoz of all the rolling the butter starts to melt n gets sticky...so chilling firms the dough n helps while cutting into shapes...
  • Now remove the dough , unwrap and cut into desired shapes using cookie cutters or knife ....i've shaped out few hearts n circles..
  • Remove the cut dough on to a baking tray lined with parchment paper...
  • Top them with sprinkles if u want...
  • If the dough starts to stick place it in fridge again for 15 mins ...
  • Now bake this in a preheated oven at 180°c or 325°f  until the edges turn slightly golden or for about 15 to 20 mins...
  • Once baked to perfection remove n cool on a wire rack ...
  • Store them in an air tight container after cooling completely..
  • Cherish until stock lasts !!!
