Bhatura / Bhatoora !!!! My way !!!


Bhatura / Bhatoora is a fluffy deep fried bread from North India , especially Punjabi cuisine is not complete without this !!!
It is traditionally served with chick pea / chana masala...
It is made using All purpose flour.. resulting in softest ..fluffiest bread ever...
But i made it with a twist so check out its recipe ....

Ingredients :     yield : 16 
  • 2 cups All purpose flour / Maida
  • 1/4 cup Sooji / Upma rawa
  • 1/4 cup wheat flour/ Atta
  • 2 tbsp yoghurt / curd
  • 1/4 tsp Salt 
  • 1 tbsp oil
  • Water as needed ( i used around 1/3 cup ...as every flour and yoghurt is different ..watch out for the texture , we need a stiff dough )
  • Oil for deep frying
Method :

  • In a wide bowl take sifted all purpose flour and whole wheat flour..
  • To this add the sooji , yoghurt, oil and salt..
  • {(Sooji helps in maintaing the puffs for longer..
  • Wheat flour helps to maintain the shape..as maida, becoz of all the gluten spreads in its own way while rolling...so wheat flour helps in attaining perfect rounds..
  • Oil helps in making the mixture crumbly n getting perfect texture...
  • And yoghurt helps in improving its taste..)}
  • Mix everything really good until crumbly in texture...
  • Now adding water little by little knead a stiff dough...
  • Be cautious while kneading do not add more water...
  • Once well kneaded cover with a damp cloth n set aside atleast for half hour...
  • Now divide the dough into equal portions..i could make 16 out of it...
  • Meanwhile start heating oil in a pan / kadai ..
  • Now roll out into round discs dusting with wheat flour ...roll them slightly thick than regular poori..
  • Once done rolling deep fry them in hot oil...
  • Watch them puff up n turning slightly golden...

  • Drain n remove them on to a paper towel ..
Perfect Bhaturas without any soda or other raising agent are done to be served..
Serve them with chana masala or any other gravy of u r choice...
