Methi Chaman !!!

Methi one of a kind subtle..creamy n luscious green in color...The Green makes me hungry & crave for more n more ..eating this gutt n mind both feel happy as its a guilt free food...
 I very much remember it was on our first anniversary that i tasted this yumminess...When sunil ordered this along with jeera rice ...i was like Methi what ???
And he was the one who insisted me to taste this ...really thankful to him n glad that i did taste..or else i would have missed it a big time...
Its so has nothing to do with appearance...!!! In this case taste...Lol !!

Ingredients :

1 cup packed Fenugreek /Methi leaves
(Sorted n washed )
100 gms or 2 1/2cups packed spinach
(Sorted n washed )
1/2 cup coriander leaves
1/4 cup frozen / fresh peas (optional )
1  finely chopped onion
200 gms Paneer cut into bite size pieces n soak in water until use
5 to 6 Green chiilies finely chopped
( depending on spice intake )
3 large cloves garlic crushed
1/2 tsp Ginger garlic paste
1 tbsp coriander powder
1 tsp cumin powder
1 tsp Garam masala powder
Salt to taste
1/8 tsp turmeric
2 tbsp oil
1 tbsp butter
1 tsp sugar
2 cardamom pods
An inch piece cinnamon
4 cloves
1 tsp Shahi jeera
2 to 3 tbsp fresh cream
Coriander for garnish

Method :
Half fill a deep pan with water and bring it to a boil..once boiling add the spinach and Methi leaves...boil this for 10 mins now add the coriander leaves n simmer for few seconds...later drain the water n cool them...
Once cooled grind into a fine paste n set aside..
In a pan add the oil/butter n heat...once warm add the whole Garam masala and shahi jeera...let the jeera splutter add in chopped onions...saute until add in crushed garlic..n saute until garlic turns golden...

Next goes in ginger garlic paste and green chillies saute this till the raw smell from ginger n garlic evaporates..
Later add in a pinch of turmeric , ground paste and sugar..saute until the mixture dries up n oil starts oozing out...

Now add salt , cumin powder , coriander powder , garam masala powder along with some water....stir well ..n cook it covered for 5 mins ..
Next add in the peas , paneer and few coriander leaves...stir well n check the seasoning...alter if salt is required...
Now add the cream ..stir...cover n cook for few mins ..this helps the paneer to soak up the gravy ...
Now Turn off the heat ...
And its ready to be served...
