Kadai Bhindi !!!

Kadai Bhindi is one my favorite Kadai dishes...
I love Bhindi in any form n this is one amongst them...
Its so colorful with all the veggies and the flavors of coriander n cumin powders blend in so well making it a lip smacking dish...
It is a semi gravy dish not too dry nor too gravy...
Goes well with roti, phulka , jeera rice and much more...

Ingredients  :
 1 big onion chopped
1 cup diced Mixed peppers / capsicum or any color of u r choice...( i used yellow , green n red )
1 cup chopped tomato
1 cup diced Bhindi / Lady's finger
{These are the main veggies...}
Few sprigs of coriander chopped
3 to 4 green chillies slit
1/4 cup of peas ( optional )
1 tsp cumin
1 tsp coriander powder
1/2 tsp cumin powder
1 tsp ginger n garlic paste
1/2 tsp Garam masala powder
1tsp crushed coriander seeds
2 tbsp cashew nut powder ( optional )
2 tbsp oil or butter or ghee
( i used olive oil )
Salt to taste
1 tsp red chilli powder ( more or less according to preference )

Method :
First n foremost deep fry diced bhindi ...just until the stickyness goes off...u dont want it to turn crispy and change color..
Check the picture below for reference...

Now in a non stick pan  / kadai add the oil and heat it..
Once hot add in the cumin seeds n crushed coriander seeds...
Fry until the cumin splutter n coriander seeds turns aromatic...
Now add in chopped onions and a 1/4 tsp of salt ...(salt helps in sweating the onions real quick...)

Saute it for couple of mins ...just until they sweat..
Now goes in the ginger garlic paste  , green chillies n turmeric..
Fry until the raw smell from the 2G( ginger garlic ) paste evaporates...
Now add in the chopped tomatoes...n saute until they turn soft n mushy...
Once done add in the cumin , coriander , red chilli and garam masala powders...(at this stage i removed the chillies n its optional ...just making sure that my kids don't bite into it n start screaming... :P )

Stir well n cook for a min..
Now add in the fried Bhindi and diced peppers / capsicum, peas , half of chopped coriander leaves n salt ..
Mix well and add a 1/4 cup of water..
Cover it with a lid n cook for 10 mins on medium heat...

After 10 mins remove the lid and add in the cahewnut powder ..
Stir well n add the left over coriander leaves...
(The role of cashewnut powder here, is to balance of all the masala's and leave a suttle flavor ..so kids n adults can equally enjoy thus goodness )
Mix well again n dish out...
This veggie goodness is ready to serve...
